Frozen Salad

3 ounce package of cream cheese
1/3 cup of mayonnaise
1 teaspoon lemon juice
2 egg whites
1/3 cup sugar
1 cup whipping cream
5-6 large marshmallows cut up
1/4 cup mandarin oranges (drained and halved)
1 pound can fruit cocktail (big chunk is better)
2 tablespoons maraschino cherries chopped
1 tablespoon walnuts chopped

Blend cheese, mayonnaise, and lemon juice. Beat egg whites until foamy. Beat in sugar, a tablespoon at a time until stiff peaks form. Beat cream until stiff. Fold cream into egg whites. Fold into cheese mixture. Fold in rest of ingredients. Pour into a 8″ square dish. Freeze. Yields 6-8 servings.

Chicken and Broccoli Casserole

2 (10 ounce) packages of frozen broccoli spears
6 cups of chicken
2 cans cream of chicken soup
1 cup of mayonnaise
1 teaspoon lemon juice
1/2 teaspoon curry powder
4 tablespoons melted butter
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup of shredded cheddar cheese
1 cup Pepperidge Farm dressing

Mix together soup, mayo, juice, curry powder, salt and pepper. Place cooked frozen broccoli in bottom of large casserole dish. Place cooked cut up chicken on top of broccoli. Spread soup mixture on top of that. Mix melted butter and dressing and spread it on top of cheese. Bake for 30 minutes at 350 degrees. Yields 8-10 servings.

Brad’s Cheddar Pecan Cheese Ball

Mix at least 2 hours ahead of time and let stand in the fridge. Overnight would be better. Take out and let come to room temperature 30 minutes before serving.

8 ounces Cream Cheese
8 ounces Sharp Cheddar (shredded is best since it will half to be worked less)
1 tbsp Worcestershire Sauce
1 tsp Lemon Juice
1 small onion chunked
2 cloves Garlic or 1 tsp Garlic Powder
2 dashes of Hot Sauce

Chopped Pecans

Put onion and garlic in food processor and mince fine. I use garlic powder if the onion seems especially wet. If using garlic powder wait 15 minutes to let the powder soak in the liquid before continuing, it will provide a nicer mouth feel and the ball will hold together better. Mix well in food processor, but don’t overheat it. Scrape the food processor bowl with a rubber spatula and roll cheese mix in a ball or log. Roll the formed cheese in chopped pecans.
