Tuna Casserole

Campbell Soup created this recipe.

1 can (103/4 ounces) cream of celery or mushroom soup

1/2 cup milk

2 cups hot cooked medium egg noodles, drained

1 cup cooked green peas, drained

2 tablespoons chopped, canned pimento, optional

2 cans (6 ounces each) tuna, drained and flaked

1/4 cup shredded cheddar cheese, optional

2 tablespoons dry bread crumbs

1 tablespoon butter or margarine, melted

Heat oven to 400. Lightly butter a 11/2-quart casserole. Mix soup and milk in casserole. Stir in noodles, peas, pimento if desired and tuna. Bake, uncovered, for 20 minutes. Stir. Mix cheese if desired, crumbs and butter in a small bowl. Scatter evenly over the tuna mixture and bake 5 minutes more or until lightly browned. Makes 4 servings.

Cajun Paella

2 tablespoons olive oil
4 chicken leg quarters
2 (8 ounce) packages dirty rice mix
5 cups water
2 pounds whole cooked crawfish, peeled
3/4 medium shrimp – peeled and deveined
1/2 pound andouille sausage, sliced into rounds
2 cups sliced mushrooms
1 large green bell pepper, chopped
1 large sweet onion, chopped
3 cloves garlic, minced

Directions

Heat oil in a heavy Dutch oven over medium high heat. Sear chicken on all sides until browned. Stir in dirty rice mix and water. Stir in crawfish, shrimp, sausage, mushrooms, bell pepper, onion and garlic. Bring mixture to a boil, and stir. Reduce heat, cover and simmer until rice is tender, and moisture is absorbed, 25 to 30 minutes.

Tater-Tot Casserole

1 pound hamburger
1/4 cup chopped onions
1/4 cup chopped celery
10 ounce can of condensed mushroom soup
16 ounce package of tater tots

Brown hamburger and drain. Line bottom of oblong baking dish with the hamburger. Chop onions and celery and sprinkle on top of hamburger. Mix the soup with 1/2 can of water and pour on top of everything. Place tater tots on top to cover completely. Bake at 350 degrees for 45 minutes. Yields 5-6 servings.
